
I love cheese. As a child, I do believe I considered cheese a "treat", like an after school snack. Whenever I have to shred cheese for any cooking venture, I always have to slice myself off a generous piece or two just because. Sharp cheddar is among my favorites. And bless my mother-in-law who often brings my delicious favorite brie to family functions. I think I could eat my weight in brie, as long as the rind has been cut off. I recently was reminded how very much I LOVE pepper jack cheese. Where have you been all my life, dear pepper jack cheese? I've been eating it on my Subway sandwiches as long as I can remember, but why didn't I think that it would be delicious in other places as well? Like a grilled cheese sandwich made completely with pepper jack cheese?.... BRILLIANT. Or our friends that made the best baked potato soup I've ever had simply because they substituted pepper jack cheese for cheddar... I've planned on trying this recipe I got from my sister's recipe review blog, but you'd better believe I'll be substituting in pepper jack cheese and then probably be popping tums for the remainder of the evening. But it will be worth it because my stomach juices will be swimming with pepper jack cheese.

ReplyDeleteOoh - did you already try it with pepper jack? That sounds awesome. Cheese is candy here too. We have to buy three 2-pound bricks of sharp cheddar at Sam's every month to get our baseline cheese needs met. Pepper jack is the "cheese candy" of Jeremy's house, so I'm sure we would love it. Let me know how it turns out.
